Kitchen stores would like you to believe cooking requires forty items and an avocado slicer. Every recipe on this site was developed with the list below: seventeen tools, no unitaskers, most of them cheap and durable enough to be the last one you buy.

## Cutting:

**1\. A chef's knife** you keep sharp. One good 8-inch knife outworks a block of dull ones; sharpness, not price, is what matters.

**2\. A paring knife** for the small jobs.

**3\. Two cutting boards,** one for produce, one for raw meat, so cross-contamination is solved by geography instead of vigilance.

## Heat:

**4\. A 10 to 12-inch cast iron skillet or heavy stainless steel pan.** It will sear, fry, roast, and bake, and the cast iron version doubles as a pancake griddle and a pizza pan. The workhorse behind our [skillet pot pie](https://chefnfood.com/recipes/skillet-chicken-pot-pie-biscuit-top/) and half the recipe library. **5\. A large Dutch oven or heavy pot** for soups, braises, and pasta water.

**6\. A nonstick pan** reserved for eggs and delicate fish.

**7\. Two sheet pans,** the true workhorses of weeknight cooking; every sheet-pan dinner on this site assumes them.

**8\. A 9x13 baking dish** for casseroles and bakes.

## Measuring and knowing:

**9\. An instant-read thermometer.** The single highest-value tool in the kitchen, usually around $10 to $15\. It replaces guessing with knowing, and it's the reason our recipes can say [165°F](https://chefnfood.com/recipes/meat-cooking-temperatures-chart/) instead of "cook until done."

**10\. Measuring cups and spoons, plus one big mixing bowl.**

**11\. A kitchen scale,** optional everywhere except baking, where it quietly fixes most failures.

## Hands and motion:

**12\. Tongs,** your heat-proof second hand.

**13\. A fish spatula,** thin, flexible, and misnamed: it's the best all-purpose flipper. **14\. A wooden spoon or silicone spatula.**

**15\. A whisk** for dressings, batters, and the pan sauces in our [French techniques guide](https://chefnfood.com/recipes/french-cooking-techniques-home/).

## Processing:

**16\. A box grater and a vegetable peeler,** together the cheapest food processor you'll ever own.

**17\. A colander** plus a fine-mesh sieve if you can stretch to both.

## What you can skip

Garlic presses (the knife does it), avocado tools, egg cookers, most single-purpose electrics, and the knife block filled with knives you never use. The two upgrades worth making later, once the habit is real: a stand mixer if you bake weekly, and a slow cooker or multicooker if [set-and-forget dinners](https://chefnfood.com/recipes/slow-cooker-pulled-pork-sandwiches/) fit your life.

## If you're starting from zero

Buy in this order: chef's knife, skillet, sheet pan, thermometer, tongs. Those five cook eighty percent of this site. Add the rest as recipes demand them, which is the only shopping list that never wastes money.
