Since 2020, the Michelin Guide has handed out a star that has nothing to do with how refined the cooking is. The Green Star recognizes restaurants at the forefront of sustainability, and it works differently from every other award in the guide.

## What the Green Star measures

Where a Michelin star judges what's on the plate, the Green Star judges how it got there: sustainable sourcing from local and seasonal producers, reducing food waste, avoiding non-recyclable materials, energy and resource choices, and generally running a kitchen whose respect for its ingredients extends to where they come from. Inspectors also weigh how well the restaurant communicates that approach to diners, because part of the award's purpose is spreading the practices.

## Who can earn one

Any restaurant in the Michelin Guide, at any level. That's the unusual part: a three-star temple of fine dining and a simple recommended farm restaurant can both be awarded a Michelin Green Star, and it stacks on top of whatever other recognition the kitchen has. It cuts across the whole guide rather than sitting on the ladder.

## Why Michelin added it

Restaurants sit at the end of enormous supply chains, and chefs influence how thousands of diners think about food. The award began in 2020 as an initiative to push gastronomy toward practices the planet can live with. The guide's bet is that spotlighting kitchens that farm their own land, buy whole animals, compost seriously, or build menus around what's actually in season will pull the rest of the industry along. Judging by how often Green Star chefs show up in the guide's own editorial, it's working as a megaphone.

## The home-kitchen version

You don't need a restaurant to cook like a Green Star kitchen. The core habits translate directly: buy [what's in season](https://chefnfood.com/recipes/september-produce-guide/) because it's cheaper and better; treat vegetables as mains, not garnish; use the whole ingredient (stems, bones, yesterday's rice); and waste less by planning. Our [Everything-in-the-Fridge Egg Fried Rice](https://chefnfood.com/recipes/everything-in-the-fridge-egg-fried-rice/) is basically the Green Star philosophy as a weeknight dinner.
