Fifteen minutes of work in the morning, and dinner is waiting when you get home. It comes to about $2.50 a serving and tastes like it simmered all day, because it did. One batch is six dinners and almost everything in it is shelf-stable.

## Ingredients

- 1 lb Italian sausage, casings removed
- 1 large onion, diced
- 3 carrots, diced
- 3 celery stalks, diced
- 5 cloves garlic, minced
- 3 cans (15 oz each) cannellini beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 6 cups chicken broth
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp kosher salt, plus more to taste
- ½ tsp black pepper
- 1 bunch kale, stems removed, leaves torn
- 2 tbsp red wine vinegar
- Grated Parmesan and olive oil, for serving

## Instructions

1. Brown the sausage in a skillet over medium-high, breaking it up, about 6 minutes. Transfer to the slow cooker with a slotted spoon, leaving the fat behind.
2. Add the onion, carrots, and celery to the same skillet and cook 5 minutes in the sausage fat. Add the garlic for the last 30 seconds. Scrape all of it into the slow cooker.
3. Add the beans, tomatoes, broth, bay leaves, thyme, salt, and pepper. Stir.
4. Cover and cook on **low for 6 hours** or high for 3½.
5. Fish out the bay leaves. Scoop out about 2 cups of the stew, mash it roughly with a fork or blend briefly, and stir it back in. This thickens the broth into something with body.
6. Stir in the kale and cook 10 minutes more until wilted.
7. Off heat, stir in the vinegar. Taste and add salt — beans absorb a lot of it. Serve with Parmesan and a drizzle of olive oil.

## Chef’s Take

The fifteen minutes of stovetop work before anything goes in the slow cooker is what separates this from the flat, boiled-tasting stews slow cookers are famous for. Slow cookers can’t brown — they hold moisture in, which is the opposite of what browning needs. Do the browning yourself and you get the depth; skip it and you get soup that tastes like it was made in a machine.

**Pro tip:** the vinegar at the end is doing more than you’d expect. Six hours of low, moist heat rounds every flavor into the same soft shape. A tablespoon or two of acid at the finish re-separates them, and the difference is immediate — taste it before and after.

## Substitutions

- **Stovetop:** simmer covered on low for 45 minutes instead of 6 hours.
- **Vegetarian:** skip the sausage, use vegetable broth, and add 1 lb sliced mushrooms browned hard in step 1 plus 1 tsp smoked paprika.
- **Dried beans:** 1½ cups dried cannellini, soaked overnight, cooked on low 8 hours with an extra cup of broth. Cheaper still.
- **Spinach or chard** for the kale; add in the last 3 minutes since they wilt faster.
- **No cannellini:** great northern, navy, or chickpeas all work.

## Storage and reheating

Refrigerate up to 3 to 4 days (the USDA guideline for leftovers); the flavor gets better after the first night. Reheat on the stove with a splash of broth. Freezes very well for 3 months. This is the single best value recipe in the library — one batch is six dinners, and the ingredients are shelf-stable except the kale.

## Serving suggestions

Crusty bread is mandatory. A big spoonful of Parmesan and good olive oil on top. If you want to stretch it further, add a cup of small pasta in the last 15 minutes.
