Crispy Chicken Thighs with Charred Broccoli

One sheet pan, two components, and thirty-five minutes start to finish. The broccoli roasts in the fat rendering off the chicken, which is the entire reason people who claim to hate broccoli eat this. Preheating the pan is what separates crisp skin from a slow bake.

Ingredients

  • 8 boneless, skin-on chicken thighs (about 2 lb)
  • 1 large head broccoli (about 1½ lb), cut into florets
  • 3 tbsp olive oil, divided
  • 1½ tsp kosher salt, divided
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • 1 lemon, halved
  • 2 tbsp grated Parmesan

Instructions

  1. Heat the oven to 425°F and put a rimmed sheet pan in while it preheats. A hot pan is what gives you a sear instead of a slow bake.
  2. Pat the chicken thighs very dry. Toss with 1 tbsp olive oil, 1 tsp salt, garlic powder, smoked paprika, and pepper.
  3. Toss the broccoli florets with the remaining 2 tbsp oil and ½ tsp salt.
  4. Carefully pull out the hot pan. Lay the thighs skin-side up on one half with space between them, and spread the broccoli on the other half in a single layer. Crowding is what turns roasted broccoli into steamed broccoli.
  5. Roast 22–25 minutes, until the chicken skin is browned and crisp and registers 165°F, and the broccoli edges are charred in spots.
  6. Squeeze half the lemon over everything, scatter the Parmesan over the broccoli, and cut the remaining half into wedges for the table.

Chef’s Take

Preheating the sheet pan is the whole technique. Cold pan means the chicken skin sits and slowly renders while the meat overcooks around it; hot pan means it starts crisping on contact. The other thing worth knowing: broccoli’s char comes from direct dry heat, so anything that adds moisture — washing it and not drying it, crowding the pan, covering with foil — kills the result.

Restaurant tweak: if the skin isn’t as crisp as you want at minute 22, run it under the broiler for 90 seconds. Stand there and watch it. It goes from perfect to burnt in about 20 seconds.

Substitutions

  • Bone-in thighs: add 8–10 minutes and check temperature rather than time.
  • Chicken breasts: halve them horizontally first, and pull at 165°F, likely around minute 18.
  • Cauliflower, brussels sprouts, or green beans all take the same treatment. Green beans need only 15 minutes, so add them partway.
  • No Parmesan: a squeeze of extra lemon and a pinch of flaky salt does similar work.

Storage and reheating

Refrigerate up to 4 days. Reheat in a 400°F oven or air fryer for 8 minutes to bring the skin back — the microwave will make it soft and sad. The broccoli reheats acceptably but won't re-crisp; it's good chopped cold into a grain salad the next day.

Serving suggestions

Rice, orzo, or a hunk of bread to catch the pan juices. A dollop of garlicky yogurt or a drizzle of hot honey over the chicken both work well.
